PRODUCT CHARACTERISTICS
• Maturation: Matured for 1 to 2 years in optimal environmental conditions, which will enhance the flavour provided by raw sheep's milk.
• Crust: defined and differentiated from the cheese. Presence of a plait design left by the mold on the side of the cheese and a floral design on the surfaces.
• Consistency of the cheese: yellowish colour, can present rounded eyes wich are typical in the matured cheese and evenly distributed.
• Texture: soft or no graininess.
• Aroma: from the lactic and / or vegetable family.
• Taste: Slightly acidic, strong and picant due to its maturacion. Pleasant and peculiar aftertaste conferred by the sheep's milk
