"Soft cheese made from raw goat's milk, rennet, salt and lactic ferments.


• Maturation: Matured for 2 to 4 months in optimal environmental conditions.

• Crust: Medium hard, defined and differentiated from the cheese. Presents mould (penicilium candidum). Ocher colour.

• Consistency of the cheese: Whitish, soft and with a uniform structure, can present rounded eyes wich are typical in the matured cheese and evenly distributed. Fatty and zero graininess.

• Texture: Compact, tender, buttery, melting in the mouth

• Aroma : Medium or low intensity of the lactic and / or vegetable family.

• Taste: Slightly salty, may have moderate acidity. Milky flavour and creamy on the palate. "
