A matured cheese made from raw sheep’s milk, without eyes or imperfections,with thin, natural rind, and buttery consistency, with hints of grass, rosemary, aromatic herbs and milk from our flock. Shaped like a bar of soap, without it being pressed and matured for about 3 months. Hard but buttery texture.

Approximate weight of the cheese: 700gr

It is a firm blind cheese, with a whitish colour. The result of a natural rennet of raw milk, it offers a sweet and bisciuty flavour of vanilla, caramel and toffee, with floral notes of honey, rose and violets. A unique cheese, of great sapid intensity and with lots of personality.

SERVING SUGGESTIONS:

• With nibbles and bread as appetizers.
