Matured sheep milk cheese “Monte de Trujillo”
A matured cheese made from raw sheep’s milk, pressed, it could present small eyes or imperfections,and with a thin natural rind. With hints of grass, rosemary, aromatic herbs and the quality of the milk of our flock. It is a rustic cheese, different from other cheeses of raw sheep’s milk, the taste of which is a journey home, to the countryside and to childhood.
Approximate weight of the cheese: 500gr
Its fine golden rind encloses a hand-pressed hard cheese, with a whitish colour and grainy texture and could present small eyes. Its flavour is very characteristic of milk and curd but with strong notes of hay and natural herbs on which the sheep feed on. Smooth with a pleasant spicy aftertaste that is very versatile in the kitchen.
